Nothing makes more sense than the build-your-own-omelet station at Eau Bistro's Sunday brunch. A table set up with two burners with skillets atop each, a bowl of eggs and an assortment of meats and vegetables draws a small crowd. Behind the table, a cook stands pleasantly awaiting orders. OK, so you really don't build the omelet, but watch and your order will come out perfectly every time. This upscale version of an all-you-can-eat buffet has three additional areas to browse: a hot section including eggs Benedict and Belgian waffles; a cold section with fruits, vegetables, lunch meats, caviar and baked goods; and a dessert section, a lavish spread of every type of cake, pie and tart known to man. At $35 a person, the all-inclusive brunch allows customers to indulge on limitless food and drink — bloody marys and mimosas included.
